Piero Sevaggio
Piero Selvaggio's vision was to bring the Italian culture, food and wines to America. Now a world-renowned restaurateur Piero made his dream a reality. His splendid Italian restaurants include his flagship VALENTINO in Santa Monica; VALENTINO Las Vegas, a jewel in the desert at the Venetian Resort • Hotel • Casino; and GIORGIO CAFFÈ & RISTORANTE, the newest addition at Mandalay Place in Las Vegas.
Sicilian-born Piero learned about traditional Italian food from his family during his childhood years in Italy. He immigrated to Brooklyn, New York at the age of 18 and later moved to Los Angeles to live with an uncle who managed a restaurant. At 24, Piero accepted a friend's invitation to open a restaurant. When his friend decided to leave VALENTINO to open his own restaurant, Piero bought his partner's share of the business. As sole proprietor of VALENTINO for over 30 years, Piero and his chefs have delighted diners with his signature Italian fare and exquisite wines. Ever expanding culinary horizons, Piero traverses the regions of Italy constantly reinventing dishes in imaginative new ways. Piero has been honored with many of the most prestigious hospitality and food awards. He has received accolades from the "Who's Who" for both the Italian influence to American Gastronomy and his Ambassador role for "Made in Italy" over the last 30 years. In addition, he received the Outstanding Service and Outstanding Wine Service Awards from the James Beard Foundation in the United States and recently the Premio della Riconoscenza in Verona, honoring the most influential restaurateur and the best Italian restaurant outside of Italy.
Piero's passion for wine led him to create award-winning wine cellars featuring over 200,000 Italian, French and California wines. The restaurants' customer service is an unmatched art form that exudes warmth and genuine hospitality. Piero Selvaggio personally invites you to indulge in a memorable meal where he awaits to greet you and your guests with a gracious buona sera–good evening!
