David Pascual, Head Brewer - Chicago Brewing Company

David Pascual is the current Head Brewer here at Chicago Brewing Company. He started at the brewery in 2005 as an assistant under Kyle Cormier, the previous brewer, who eventually helped him to takeover the brewing operations in 2008.

Before coming to Chicago Brewing Company, David received a bachelor’s degree in biology and a minor in chemistry from UNLV. While receiving his degrees at the university, he discovered his passion for beer. To further his interest in beer, he took an elective university course that taught the brewing science and appreciation of worldly beers. He excelled in the course and was then asked to intern at a local brewery by the professor and then Head Brewer, Michael Ferguson. The five month internship was the spark that upon graduation from college David took a career turn from the medical field and decided to pursue his passion in beer. A few months after graduating, David applied and was hired for an open position as the brewer’s assistant at Chicago Brewing Company and the rest is history.

Since then, David’s hard work and dedication to quality beer hasn’t ceased. He plans to continue the great lineage of Chicago Brewing Company brewers, like the two before him, Paul Marczyk and Kyle Cormier.
