Extraordinary talent is something that we all wish to have. In these days of multi-million dollar chefs entrenching themselves in the Las Vegas Market it is refreshing that one of the best new steakhouses in Las Vegas is captained by this local phenom.
As a transplant from Cedar City Utah, Chef Baldwin came to Las Vegas as a young man in 1992. His love for the culinary arts began with the aroma’s of his grandmother’s kitchen. Her passion for flavors was inherited by the young chef at the ripe age of 8 years old. Throughout his formative years he followed his culinary dreams washing dishes, cooking in hotel/casino environments and began formal training at the Culinary Training Center in Las Vegas with continuing education at the Community College of Southern Nevada.

In 1997, Chef Baldwin was desperately looking for a job. He walked in to Palace Station, picked up the house phone and asked to be connected to the executive chef who told Brian that he did not have enough experience to be placed on the culinary team. Chef Baldwin refused to walk away without an audition and his determination won the respect of the Executive Chef at the time. He was given his chance. He was put on the line at the Iron Horse café for two hours on the egg station at the peak of breakfast hours and proved himself to the Executive Chef and was hired on the spot.

Since his debut with Station Casinos Chef Baldwin has worked his way through the ranks of the now expansive culinary team. His efforts at the Iron Horse Café earned him the advancement opportunity to cook in the Broiler Seafood and Steakhouse where he was later promoted to Assistant Room Chef.

In October of the year 2000, Chef Baldwin opened the Santa Fe Station with many responsibilities in multiple outlets; all leading to his masterpiece… The Charcoal Room.
Chef Baldwin’s culinary sensibilities have matured beyond his years with the creation of the Charcoal Room Menu. Outstanding appetizers, succulent steaks and seafood coupled with exciting side dishes and desserts have put the Charcoal Room in the running for the, “Best Steakhouse” in Las Vegas. Chef Brian’s tenacity and ability to teach his staff create a wonderfully organized and crisply clean environment for his creations to come to life. The already overwhelming response to his existing menu has moved the Chef to create daily specials that rival any of those in the celebrity chef venues. Most of his tremendous following have already gone through the existing menu once or twice since the Charcoal Room’s inception.

Chef Baldwin embodies the extraordinary talent that we all seek. It is all too apparent in his operations, food and personality. Let the rest of us continue to dream.
